Tangy Dijon Vinaigrette Salad Dressing

This salad dressing is easy to make in a pinch and lasts for about a week in the refrigerator.  This week I've been enjoying it on salads of raw kale, napa cabbage, sliced radishes, chopped green onions, and carrots.  

Tangy Dijon Vinaigrette Salad Dressing
gluten-free, dairy-free, soy-free, egg-free, nut-free, refined sugar-free

1/3 cup plus 1 Tbsp olive oil
1/2 cup apple cider vinegar
juice of 1 lemon
2 Tbsp honey or agave nectar
1 1/2 Tbsp dijon mustard
1/2 tsp salt, plus more to taste
ground black pepper, to taste

Place all ingredients in a pint-sized mason jar.  Secure lid and shake until mixed well throughout.  Store in the refrigerator for up to a week.
